Pearl Couscous With Tomatoes

In Turkey we don't have and use Moroccon style fine couscous. For Turkish people and Turkish cuisine couccous means pearl couscous which is called kuskus and it's generally prepared at home.

While couscous is a food that can be cooked in many varieties such as pasta, its usage area in Turkish cuisine is very limited. People generally cook it in the same style which means just roasting it with oil or butter and than adding water and simmering it as in kuskus pilaf recipe.

I will not pass without taking some responsibility in this regard. I've been sharing recipes for all these years, I haven't shared any recipes other than kuskus pilaf, moghrabieh and Italian wedding soup on my blog. Both of the recipes belong to foreign cuisines, moreover. But I promise to share more couscous recipes in the future. I think we're off to a good start today with tomato couscous recipe.

You can prepare tomato couscous like rice (as a side dish) or pasta (as a main dish). In short, it is a very successful recipe both as a side dish and as a main dish. If you want to cook it as a side dish, you can serve it with meat dishes such as traditional turkish kofte or sac tava recipe, chicken dishes such as marinated chicken skewers, or vegetable dishes such as no stir eggplant stew. Of course, whether it is a main dish or a side dish, the indispensable thing is yogurt while serving it.

Couscous takes shape like a mold when it waits after it is cooked like pasta. Don't let this worry you. When you mix it, it will still be grainy. If you want to save the leftover couscous and heat it the next day, you can add a small amount of water before heating it in the microwave or on the stove with the lid closed on a very low heat.

Ingredients

  • 1 cup of pearl couscous,
  • 1 red pepper,
  • 2 tomatoes, grated,
  • 4-5 tablespoons of olive oil,
  • 1 teaspoon of paprika,
  • 2 cups of boiling water,
  • Salt.

How to make steps

Preparation

  1. Heat the olive oil in a large pan, add the finely chopped pepper and stir fry it until it softens,
  2. Add paprika and mix,
  3. Add grated tomatoes and cook for a few minutes,
  4. Add couscous and mix,
  5. Add the water and salt, mix, close the lid  and cook until the water is absorbed.
