Hasselback Potato With Ground Beef
Serving : 4 Servings
Ingredients
- 150 g ground beef,
- 1 onion, grated,
- 1 tbsp bread crumbs,
- 2 tbsps chopped parsley,
- 1/2 tsp pepper,
- 1/2 tsp cumin,
- 4 long sized potatoes,
- 2 tomatoes,
- 1 tbsp tomato paste,
- 1 clove of garlic,
- 2 tsps dried mint,
- 1 tsp sugar,
- Salt to taste,
- 1 cup grated mozzarella.
Preparation
- In a deep bowl combine ground beef, onion, bread crumbs, parsley, pepper, cumin and salt and knead,
- Lay potatoes flat on cutting board and starting from one end of the potato, make slits about 2-3 mm apart,
- Cut to about 0.5 cm from the base of the potato, be careful not to slice all the way through,
- Carefully insert beef mixture in between the slits of the potatoes,
- Transfer potatoes into a greased baking pan and cover with aluminium foil,
- Bake at 200 C degrees for about 50 mins,
- Grate tomatoes,
- Add minced garlic, tomato paste, salt, dried mint and sugar and mix well,
- Remove the pan from oven and pour the sauce over,
- Bake for another 10 mins.,
- Remove from oven and sprinkle grated mozzarella on top,
- Bake again until the cheese melts.
