Hasselback potato With Ground Beef

Ingredients :

  • 150 g ground beef,
  • 1 onion, grated,
  • 1 tbsp bread crumbs,
  • 2 tbsps chopped parsley,
  • 1/2 tsp pepper,
  • 1/2 tsp cumin,
  • 4 long sized potatoes,
  • 2 tomatoes,
  • 1 tbsp tomato paste,
  • 1 clove of garlic,
  • 2 tsps dried mint,
  • 1 tsp sugar,
  • Salt to taste,
  • 1 cup grated mozzarella.

Preparation :

  1. In a deep bowl combine ground beef, onion, bread crumbs, parsley, pepper, cumin and salt and knead,
  2. Lay potatoes flat on cutting board and starting from one end of the potato, make slits about 2-3 mm apart,
  3. Cut to about 0.5 cm from the base of the potato, be careful not to slice all the way through,
  4. Carefully insert beef mixture in between the slits of the potatoes,
  5. Transfer potatoes into a greased baking pan and cover with aluminium foil,
  6. Bake at 200 C degrees for about 50 mins,
  7. Grate tomatoes,
  8. Add minced garlic, tomato paste, salt, dried mint and sugar and mix well,
  9. Remove the pan from oven and pour the sauce over,
  10. Bake for another 10 mins.,
  11. Remove from oven and sprinkle grated mozzarella on top,
  12. Bake again until the cheese melts.
