Baked Eggplant Kebab Recipe
Serving : 4 Servings
Ingredients
- 400 gr. ground meat,
- 1 onion,
- 1 egg,
- 2 tablespoons bread crumbs,
- 1 handful minced parsley,
- 1 teaspoon black pepper,
- 1 teaspoon cumin,
- Salt to taste,
- 3 green peppers, 1 chopped,
- 2 mid-sized eggplants,
- 2 tomatoes, grated,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- 1 cup water,
- 1 teaspoon salt,
- Vegetable oil for frying.
Preparation
- Grate the onion and add it to the meat,
- Stir in the breadcrumbs, parsley, black pepper, cumin and salt, then mix well with your hands,
- Form the meat mixture into patties,
- Peel and slice the eggplants in circles,
- Heat the vegetable oil in a large pan,
- Fry eggplants until golden in both sides,
- Fry the patties in the same oil as well,
- Set fried patties and eggplants in a baking dish as one patty and one patty,
- In a bowl mix grated tomatoes, chopped green pepper, tomato paste, paprika, water and salt,
- Pour the sauce over the dish,
- Set green peppers in the middle of the dish,
- Bake at 200 C degrees for 15-20 mins.
