Baked Eggplant Kebab Recipe Baked Eggplant Kebab Recipe


  • 4 eggplants,
  • 1 tablespoon tomato paste,
  • 2 teaspoons paprika,
  • 2 teaspoons salt,
  • 2-3 cups water,
  • Vegetable oil to fry eggplants,
  • 4 cherry tomatoes,
  • 2 green peppers,


  • 400 gr. ground beef / lamb,
  • 1 onion (grated),
  • 2 tablespoons bread crumbs,
  • 1 teaspoon cumin,
  • 1 teaspoon salt,
  • 1/2 teaspoon black pepper,
  • 1 tablespoon minced parsley.


  1. Peel and slice the eggplants 3/4 the way through into 2-3 cm thick slices,
  2. Heat the oil in a large skillet,
  3. Fry the eggplants on all sides over medium heat,
  4. For the meatballs, mix all the ingredients together with your hands in a large bowl,
  5. Prepare small round patties that can fit into the slits in the eggplants,
  6. Insert the meatballs into these slits and place the eggplants in the baking dish,
  7. Place the tomatoes and sliced pepper in the centre of the baking dish,
  8. Bake at 220 degrees celsius until the meatballs are fully cooked (20-25 mins),
  9. Now stir together tomato paste, paprika, salt and 2-3 cups of water,
  10. Pour the mixture over the eggplants,
  11. Bake 15-20 mins more,
  12. Remove from the oven and sprinkle over some minced parsley.
