Beli Kırık Eggplant Kebab Recipe

Ingredients
- 4 eggplants,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- 2 teaspoons salt,
- 2-3 cups water,
- Vegetable oil to fry eggplants,
- 4 cherry tomatoes,
- 2 green peppers,
Meatballs;
- 400 gr. ground beef / lamb,
- 1 onion (grated),
- 2 tablespoons bread crumbs,
- 1 teaspoon cumin,
- 1 teaspoon salt,
- 1/2 teaspoon black pepper,
- 1 tablespoon minced parsley.
Preparation
- Peel and slice the eggplants 3/4 the way through into 2-3 cm thick slices,
- Heat the oil in a large skillet,
- Fry the eggplants on all sides over medium heat,
- For the meatballs, mix all the ingredients together with your hands in a large bowl,
- Prepare small round patties that can fit into the slits in the eggplants,
- Insert the meatballs into these slits and place the eggplants in the baking dish,
- Place the tomatoes and sliced pepper in the centre of the baking dish,
- Bake at 220 degrees celsius until the meatballs are fully cooked (20-25 mins),
- Now stir together tomato paste, paprika, salt and 2-3 cups of water,
- Pour the mixture over the eggplants,
- Bake 15-20 mins more,
- Remove from the oven and sprinkle over some minced parsley.
