Baked Shish Kofte Recipe


  • 500 gr. ground meat,
  • 1 onion (grate and squeeze to get rid of the moisture),
  • 1 egg,
  • 3 tablespoons breadcrumbs,
  • 1 handful parsley,
  • 1 tablespoon vinegar,
  • 1 teaspoons salt,
  • 1 teaspoon cumin,
  • 1 teaspoon black pepper,
  • 1 teaspoons baking soda,
  • 1 teaspoon red pepper flakes,
  • 1 teaspoon paprika,
  • 20 cherry tomatoes,
  • 4-5 long green peppers.


  1. Place all the ingredients except the tomatoes and peppers in a large mixing bowl,
  2. Using your hands, mix everything together like you would knead a bread dough,
  3. Make walnut size balls out of the meat mixture,
  1. Place them on skewers with the order; 1 meatball, 1 tomato and 1 piece of pepper,
  2. Place all the skewers on a baking dish making sure that the meatballs and vegetables don’t touch the bottom of the dish,
  3. Bake at 180 degrees celsius for 40-45 mins.
