Arugula Yogurt Salad Recipe
When you think of arugula salad, I'm sure many of you think of green arugula salad. Obviously, so do I. But this time, I made a difference and mixed arugula with classic garlic yogurt and made a yogurt salad. Good thing I did. I have always believed that anything mixed with garlic yogurt will be delicious. I am sure that this belief, which I added in addition to the four ingredients in the recipe, adds extra flavor to the recipe.
I am happy to add a version with yogurt to the green salads I shared before, such as arugula salad, arugula salad with mango, and firik bulgur salad with arugula. Because even though green salads are delicious, you may not have the large number of ingredients at the same time, or you do, they take a long time to be washed and chopped one by one. The arugula salad with yogurt is not like that. It takes a very short time to prepare. In addition, it can be placed next to any meal that goes well with green arugula salads.
It will go very well with rice dishes such as tas kebab or tavuk kapama. Since the main course and rice are cooked together in rice dishes, they do not need a side dish. Combined with the ease of arugula salad with yogurt, these dishes will create a very practical menu.
Strained yogurt always gives better results in salads with yogurt. However, it is not always possible to have strained yogurt at home. I have a practical solution for this situation as well. You can turn normal yogurt into strained yogurt by just straining it with a V40 coffee filter for about 30 minutes.

Ingredients
- 100 g arugula,
- 2 cups of strained yogurt,
- 1 clove of garlic,
- Salt to taste.
For topping;
- 4 tablespoons of olive oil,
- 1 teaspoon of paprika.
Preparation
- Wash, dry and chop the arugula,
- Mix arugula, yogurt, crushed garlic and salt in a bowl,
- Transfer the mixture to the serving plate,
- Heat the olive oil for topping,
- Add paprika and sir fry,
- Pour the dressing over the salad.
