Ingredients
- 800 g potatoes,
- 1/2 onion,
- 1 tomato,
- A handful of chopped parsley,
- 2 tablespoons capers,
- 1 heaping teaspoon whole grain mustard,
- 1 teaspoon sumac,
- 4 tablespoons apple cider vinegar,
- Juice of 1/4 lemon,
- 2 tablespoons olive oil,
- Salt.
Preparation
- Peel and dice the potatoes,
- Place them in a pot, cover with water, and boil until tender,
- Meanwhile, finely chop the onion,
- Drain the potatoes and transfer them to a bowl to cool,
- Once cooled, add all remaining ingredients and mix well.
