Spinach With Bulghur Wheat
Serving : 4 Servings
Ingredients
- 1 onion, chopped,
- 1 carrot, diced,
- 500 g spinach, wahed, drained, chopped,
- 1/4 cup coarse bulghur, washed and drained,
- 1 tbsp tomato paste,
- 2 tsps paprika,
- 3 tbsps olive oil,
- 1 cup lukewarm water,
- Salt to taste.
Preparation
- Heat olive oil, add onions and cook until softened,
- Add carrots and cook for 2 mins, stirring,
- Add tomato paste and cook 1-2 mins,
- Add paprika and stir,
- Toss spinach and cook until wilted,
- Add bulghur and water,
- Cover the lid and cook until bulghur is tender,
- Add salt, stir, remove from heat.
