Potato Bulghur Kofte Recipe
Serving : 4 Servings
Ingredients
- 2 cups thin bulgur wheat,
- 3 medium size potatoes,
- 1 tablespoon tomato paste,
- 1 tablespoon pepper paste,
- 2 teaspoons paprika,
- 1/4 cup olive oil,
- 2 teaspoons red pepper flakes,
- 2 teaspoons salt,
- 1/2 bunch dill.
Preparation
- Place the bulgur in a large bowl along with 2 cups of hot water, put the lid on and let it sit for 15 mins,
- Boil the potatoes until fully softened,
- Grate the boiled potatoes and add them to the bulgur,
- Heat the olive oil in a small saucepan,
- Add the tomato and pepper paste and cook for 1-2 while stirring,
- Add the paprika, stir and remove from heat,
- Add this mixture to the bulgur and mix with your hands until you get a homogenous mixture,
- Mix in the chopped dill and form small oval-shaped balls,
- Serve with lettuce leaves.
