Potato Bulghur Kofte Recipe

Serving : 4 Servings

Ingredients

  • 2 cups thin bulgur wheat,
  • 3 medium size potatoes,
  • 1 tablespoon tomato paste,
  • 1 tablespoon pepper paste,
  • 2 teaspoons paprika,
  • 1/4 cup olive oil,
  • 2 teaspoons red pepper flakes,
  • 2 teaspoons salt,
  • 1/2 bunch dill.

Preparation

  1. Place the bulgur in a large bowl along with 2 cups of hot water, put the lid on and let it sit for 15 mins,
  2. Boil the potatoes until fully softened,
  3. Grate the boiled potatoes and add them to the bulgur,
  4. Heat the olive oil in a small saucepan,
  5. Add the tomato and pepper paste and cook for 1-2 while stirring,
  6. Add the paprika, stir and remove from heat,
  7. Add this mixture to the bulgur and mix with your hands until you get a homogenous mixture,
  8. Mix in the chopped dill and form small oval-shaped balls,
  9. Serve with lettuce leaves.
