Spinach Hunkar Begendi Recipe
Serving : 4 Servings
Ingredients
- 500 gr. beef cut into bite-size pieces,
- 1 medium onion, chopped,
- 1 tomato, grated,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- 1 pinch black pepper,
- Salt,
- 3 tbsps olive oil,
- 3 cups boiling water.
For the spinach puree;
- 500 g spinach, chopped,
- 1 tbsp butter,
- 2 tbsps flour,
- 2 cups milk,
- 1/2 cup grated parmesan or cheddar cheese,
- Salt to taste.
Preparation
- Heat a pressure cooker,
- Add the meat and cook until it turns light brown,
- Add olive oil and chopped onions and cook until translucent,
- Add the tomato paste and paprika and stir for 2-3 mins,
- Add the chopped tomato and cook until softened,
- Add water and stir,
- Put the lid on and cook according to the instructions of your pressure cooker,
- Open the lid, add the salt and pepper, continue to boil in order to reduce the sauce, until you reach the desired consistency,
- For spinach puree heat butter, add spinach and cook until tender,
- Add the flour and stir for 3 mins,
- Add the milk and cook constantly stirring until thickened,
- Add the cheese and cook until melted,
- Add salt and remove from heat,
- On a serving platter, first pour the spinach puree and then pour the meat sauce on top.
