Spinach Hunkar Begendi Recipe Spinach Hunkar Begendi Recipe


  • 500 gr. beef cut into bite-size pieces,
  • 1 medium onion, chopped,
  • 1 tomato, grated,
  • 1 tablespoon tomato paste,
  • 2 teaspoons paprika,
  • 1 pinch black pepper,
  • Salt,
  • 3 tbsps vegetable oil,
  • 3 cups boiling water.

For the spinach puree;

  • 500 g spinach, chopped,
  • 1 tbsp butter,
  • 2 tbsps flour,
  • 2 cups milk,
  • 1/2 cup grated parmesan or cheddar cheese,
  • Salt to taste.


  1. Heat a pressure cooker,
  2. Add the meat and cook until it turns light brown,
  3. Add vegetable oil and chopped onions and cook until translucent,
  4. Add the tomato paste and paprika and stir for 2-3 mins,
  5. Add the chopped tomato and cook until softened,
  6. Add water and stir,
  7. Put the lid on and cook according to the instructions of your pressure cooker,
  8. Open the lid, add the salt and pepper, continue to boil in order to reduce the sauce, until you reach the desired consistency,
  9. For spinach puree heat butter, add spinach and cook until tender,
  10. Add the flour and stir for 3 mins,
  11. Add the milk and cook constantly stirring until thickened,
  12. Add the cheese and cook until melted,
  13. Add salt and remove from heat,
  14. On a serving platter, first pour the spinach puree and then pour the meat sauce on top.
