Spinach With Quinoa
There are very few spinach dishes left that I haven’t shared so far. But I still can’t say I’ve cooked them all. For example, this quinoa spinach dish is not a classic recipe. One day, while deciding whether to cook spinach with rice or bulgur, I came across quinoa in my pantry, and that's how this recipe was born. Who knows what I'll stumble upon next and what kind of spinach dishes will come to life.
Recipes like the well-known spinach with rice and spinach with bulgur have been available here for years. From now on, I’ll continue to share more creative spinach recipes like this one with quinoa.
In this quinoa spinach recipe, there’s no tomato paste, which is commonly used in many spinach dishes. Quinoa has a very light flavor, and I didn’t want the tomato paste to overpower it. If you believe a spinach dish isn’t complete without tomato paste, you can add it right after sautéing the onion, cooking it until fragrant, just like in traditional recipes, and then continue with the rest of the steps.
The quinoa spinach dish is vegan and gluten-free. It’s also low in calories, which is why I’ve added it to the diet recipes category. I’ve portioned it with a diet-friendly serving size in mind. If you’re not on a diet, you can consider the entire dish as serving two people. Yes, it’s made with 1 kg of spinach, but anyone who has ever cooked spinach knows that it reduces significantly when cooked. The same goes for this recipe. Although it may seem like you’ll have a lot of food while washing and chopping the spinach, it turns out to be just enough for two people with a good appetite.

Ingredients
- 1 kg spinach,
- 1 onion,
- 4 tablespoons quinoa,
- 3 tablespoons olive oil,
- 1.5 cups hot water,
- Salt,
- Optional: red pepper flakes.
Preparation
- Dice the onion and sauté it in heated olive oil until soft,
- Add the chopped spinach and sauté, stirring occasionally, until it releases its juices,
- Add the rinsed and drained quinoa, water, and salt, then cook until the quinoa is tender.
