Creamed Spinach With Chickpeas Topping

Ingredients:

For Creamed Spinach;

  • 750 g spinach, washed, drained, chopped,
  • 1 tbsp butter,
  • 3 spoonful flour,
  • 2 cups milk,
  • 1/2 cup grated parmesan,
  • Salt and pepper to taste.

For Chickpeas;

  • 1 onion,
  • 1 green pepper,
  • 1 tbsp tomato paste,
  • 2 tomatoes, grated,
  • 3 cups canned chickpeas,
  • 2-3 tbsp vegetable oil,
  • 1 tsp sugar,
  • 1/4 cup boiling water,
  • Salt to taste.

Preparation:

  1. For cream spinach melt butter, add spinach and cook until tender, all the juice evaporated,
  2. Add flour and cook 5 mins., stirring,
  3. Add milk and stir well, cook until set,
  4. Add parmesan, salt and pepper, stir and remove from heta,
  5. For chickpeas heat oil, add onions and cook until softened,
  6. Add tomato paste and cook well,
  7. Add grated tomatoes,
  8. When it starts to boil add cjickpeas and cook 5 mins. ,
  9. Add water, sugar and salt,
  10. Cook for 1-2 mins. and remove from heat,
  11. Serve creamed spinach topped with chickpeas.
