Vegetable Bulghur Pilaf Recipe Vegetable Bulghur Pilaf Recipe

Ingredients:

  • 1 cup bulgur,
  • 1 onion,
  • 1 zucchini,
  • 1 red pepper,
  • 1 green pepper,
  • 1 carrot,
  • 3 tablespoons olive oil,
  • 1 tablespoon tomato paste,
  • 2 teaspoons paprika,
  • 2,5 cups water,
  • Black pepper,
  • Salt.

Preparation:

  1. Heat the oil, add the finely chopped onion and sauté until it turns translucent,
  2. Add the diced zucchini, peppers and grated carrots, and cook for 10 mins stirring occasionally,
  3. Add the tomato paste and stir for 2-3 mins,
  4. Add the paprika and stir,
  5. Add the washed and drained bulgur and stir for 1 min,
  6. Add the water, black pepper and salt, put the lid on and cook on low heat until all the water is absorbed.
