Vegetable Bulgur Pilaf Recipe
Serving : 4 Servings
Ingredients
- 1 cup bulgur,
- 1 onion,
- 1 zucchini,
- 1 red pepper,
- 1 green pepper,
- 1 carrot,
- 3 tablespoons olive oil,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- 2,5 cups water,
- Black pepper,
- Salt.
Preparation
- Heat the oil, add the finely chopped onion and sauté until it turns translucent,
- Add the diced zucchini, peppers and grated carrots, and cook for 10 mins stirring occasionally,
- Add the tomato paste and stir for 2-3 mins,
- Add the paprika and stir,
- Add the washed and drained bulgur and stir for 1 min,
- Add the water, black pepper and salt, put the lid on and cook on low heat until all the water is absorbed.
