Turkish Style Florentine Omelette

  • 1 bunch spinach,
  • 1 onion,
  • 5 eggs,
  • 1/2 cup grated cheddar,
  • 1/3 cup olive oil,
  • 2 small tomatoes,
  • Salt.


  1. Finely chop the onion and sauté in olive oil,
  2. Add the chopped spinach to the pan, cook for 3-4 mins, then remove from heat,
  3. Whisk the eggs in a separate bowl,
  4. Add the cooled spinach and onion to the eggs, along with the grated cheddar and salt,
  5. Stir everything together,
  6. Grease a springform pan,
  7. Pour the spinach egg mixture into the pan,
  8. Evenly distribute the tomato slices on top,
  9. Bake in an oven preheated to 200 degrees celsius until the eggs are set and the sides of the omelette are golden brown.
