Sauteed Purslane Recipe

Serving : 4 Servings

Ingredients

  • 1 bunch purslane,
  • 1 onion,
  • 1/4 cup vegetable oil,
  • 1 tablespoon tomato paste,
  • 2 teaspoons paprika,
  • Salt.

Preparation

  1. Finely chop and sauté the onion in vegetable oil until translucent,
  2. Stir in the tomato paste and cook for 2-3 mins,
  3. Add in the paprika and stir,
  4. Finally add in the chopped purslane along with some salt and stir,
  5. Cook on low heat (lid on) until softened, then remove from heat,
  6. Stir some crushed garlic with plain yoghurt,
  7. To serve, pour the yoghurt mixture over the purslane along with some paprika flavored oil.
