Sauteed Purslane Recipe
Serving : 4 Servings
Ingredients
- 1 bunch purslane,
- 1 onion,
- 1/4 cup vegetable oil,
- 1 tablespoon tomato paste,
- 2 teaspoons paprika,
- Salt.
Preparation
- Finely chop and sauté the onion in vegetable oil until translucent,
- Stir in the tomato paste and cook for 2-3 mins,
- Add in the paprika and stir,
- Finally add in the chopped purslane along with some salt and stir,
- Cook on low heat (lid on) until softened, then remove from heat,
- Stir some crushed garlic with plain yoghurt,
- To serve, pour the yoghurt mixture over the purslane along with some paprika flavored oil.
