Chickpea Purslane Recipe
Serving : 4 Servings
Ingredients
- 2 bunches (500-600 g) of purslane, chopped,
- 1 onion, chopped,
- 1/4 cup of rice,
- 1.5 cups of boiled chickpeas,
- 1 tablespoon tomato paste,
- 1 tsp of chili powder (may be sweet or bitter according to your taste),
- 3-4 tablespoons of vegetable oil,
- 2 cups of water at room temperature,
- Salt to taste.
Preparation
- Heat oil and sautee the onions until tender,
- Add the tomato paste and roast it until it smells good,
- Add the chili powder and stir,
- Add purslane and cook for a few minutes,
- Add rice and water,
- Cover the lid and cook on low heat until the rice softens,
- Add chickpeas, stir and cook for a few mins. more,
- Add salt, stir and remove from heat.
