Chickpea Purslane Recipe Chickpea Purslane Recipe

Ingredients:

  • 2 bunches (500-600 g) of purslane, chopped,
  • 1 onion, chopped,
  • 1/4 cup of rice,
  • 1.5 cups of boiled chickpeas,
  • 1 tablespoon tomato paste,
  • 1 tsp of chili powder (may be sweet or bitter according to your taste),
  • 3-4 tablespoons of vegetable oil,
  • 2 cups of water at room temperature,
  • Salt to taste.

Preparation:

  1. Heat oil and sautee the onions until tender,
  2. Add the tomato paste and roast it until it smells good,
  3. Add the chili powder and stir,
  4. Add purslane and cook for a few minutes,
  5. Add rice and water,
  6. Cover the lid and cook on low heat until the rice softens,
  7. Add chickpeas, stir and cook for a few mins. more,
  8. Add salt, stir and remove from heat.
