Purslane With Rice Recipe

Serving : 4 Servings

Ingredients

  • 1 lb. purslane,
  • 1 onion,
  • 1/2 cup rice,
  • 1 tablespoon tomato paste,
  • 3-4 tablespoons vegetable oil,
  • 2 cups water,
  • Salt,
  • 1 pinch red pepper flakes.

Preparation

  1. Finely chop the onion and purslane,
  2. Sauté the onion in vegetable oil until tender,
  3. Add the tomato paste and red pepper flakes and stir for 1 minute,
  4. Add the chopped purslane and stir for 3-4 minutes,
  5. Add the rice and water, then cook over low heat until the rice is soft and fully cooked,
  6. Add the salt, stir, then remove from heat.

  2. ForagePurslane: I loosely used the recipe above since I had a gallon’s worth of purslane to consume. I added Italian chicken sausage and 1 cup of homemade chicken broth (leftover from a baked whole chicken) and wow! The flavor was so good! I doubled the recipe, minus the amount of purslane and substituted olive oil for vegetable oil. Will definitely be making this again! Thanks for sharing this recipe!
