Chickpea Tomato Soup Recipe

Serving : 4-6 Servings

Ingredients

  • 5 tomatoes,
  • 1 tablespoon butter,
  • 1 tbsp flour,
  • 1/4 cup of rice,
  • 1 cup of boiled chickpeas,
  • 5 cups of water,
  • 1 cup of milk,
  • 1 tsp thyme,
  • 1 tsp dried mint,
  • 1 tsp pepper flakes,
  • Salt.

Preparation

  1. Grate the tomatoes,
  2. Melt the butter in a deep pan,
  3. Add flour and sautee until it smells good,
  4. Add tomatoes and stir well,
  5. Cover the lid and cook in low heat for 10-15 minutes,
  6. Add the water and mix (pulse with a blender if lumpy),
  7. Add rice and cook until soft in low heat,
  8. Add milk, chickpeas and spices and cook a few mins. more,
  9. Add salt, stir and remove from the heat.
