Pea and Rice Soup Recipe

Serving : 6 Servings

Ingredients

  • 1/3 cup rice,
  • 1 cup cooked canned peas,
  • 2 green peppers,
  • 2 tomatoes,
  • 1 tablespoon tomato paste,
  • 1 tablespoon flour,
  • 2 teaspoons paprika,
  • 1 tablespoon butter,
  • Salt,
  • Dried mint,
  • 5 cups water.

Preparation

  1. Melt the butter and sauté the finely chopped peppers until softened,
  2. Add the tomato paste and stir for 2 mins,
  3. Add the paprika and flour and stir for 1-2 mins,
  4. Add the grated tomatoes and cook until softened,
  5. Finally add the water and rice and cook on low heat until the rice is fully cooked,
  6. Add the peas and boil for 2-3 more mins,
  7. Add salt and dried mint, stir and remove from heat.
