Black Eyed Peas Soup Recipe
Serving : 4 Servings
Ingredients
- 1 carrot, chopped in tiny cubes,
- 1/2 cup of dried black eyed peas, washed and drained,
- 1/4 cup of rice,
- 2 cloves of garlic, mashed,
- 3 tablespoons vegetable oil,
- 1 tablespoon tomato paste,
- 1tsp ground chilli,
- 1 tsp thyme,
- 1 tsp red pepper flakes,
- Salt to taste,
- 5 cups of boiling water.
Preparation
- Soak the blak eyed peas in warm water overnight,
- Heat the oil in a deep pan,
- Add into the carrots and sautee for a few mins.,
- Add the garlic and stir,
- Add the tomato paste and sautee for a few mins.,
- Add the ground chilli and stir,
- Add water and black eyed peas and stir,
- Cover the lid and cook until the peas are soft,
- Add rice and stir and cover and cook until the rice is soft,
- Add salt, thyme and pepper flakes, stir and remove from the heat.
