Black Eyed Peas Soup Recipe Black Eyed Peas Soup Recipe

Ingredients:

  • 1 carrot, chopped in tiny cubes,
  • 1/2 cup of dried black eyed peas, washed and drained,
  • 1/4 cup of rice,
  • 2 cloves of garlic, mashed,
  • 3 tablespoons vegetable oil,
  • 1 tablespoon tomato paste,
  • 1tsp ground chilli,
  • 1 tsp thyme,
  • 1 tsp red pepper flakes,
  • Salt to taste,
  • 5 cups of boiling water.

Preparation:

  1. Soak the blak eyed peas in warm water overnight,
  2. Heat the oil in a deep pan,
  3. Add into the carrots and sautee for a few mins.,
  4. Add the garlic and stir,
  5. Add the tomato paste and sautee for a few mins.,
  6. Add the ground chilli and stir,
  7. Add water and black eyed peas and stir,
  8. Cover the lid and cook until the peas are soft,
  9. Add rice and stir and cover and cook until the rice is soft,
  10. Add salt, thyme and pepper flakes, stir and remove from the heat.
