Chicken Keshkek (Traditional Wheat and Chicken Stew) Recipe
Serving : 4-6 Servings
Ingredients
- 2 cups wheat berries,
- 1 whole chicken breast,
- 2 tablespoons butter,
- 1 tablespoon paprika,
- Salt,
- Black pepper.
Preparation
- Rinse the wheat berries and soak in warm water for 2 hours,
- Drain and place them in pressure cooker,
- Submerge them in water and cook until they soften,
- Boil the chicken breasts until softened,
- Drain the wheat berries and place in a large pot,
- Add 2 cups of the chicken broth (water used to boil the chicken breasts)
- Cook on low heat stirring and mashing constantly using a wooden spoon,
- After 5 mins of stirring add the shredded cooked chicken breasts,
- Continue cooking on low heat while stirring until the wheat becomes creamy,
- Add salt and black pepper, stir and remove from heat,
- Melt and heat the butter in a small saucepan,
- Add the paprika, stir well and remove from heat,
- Pour the melted butter over the keshkek and serve.

- Elizabeth Shaw: Salaam alaikum! I have only had it with beef but this with chicken sounds extremely good to me and I am not a chicken lover. I will eat it but it's not the first thing I will purchase to cook with. I serve my beef and wheat with cooked potatoes and carrots and I use onions in it and garlic.
