Chicken Turmeric Rice Recipe

Ingredients

  • 1 small whole chicken,
  • 2 cups of rice,
  • 2 cups boiled chickpeas,
  • 1 onion,
  • 2 tablespoons of butter,
  • 2 tablespoons of vegetable oil,
  • 2 cups of chicken broth (the broth you boiled the chicken),
  • 2 cups of boiling water,
  • 1/2 cup currant,
  • 1 tsp turmeric,
  • 1/4 tsp black pepper,
  • Salt to taste.

Preparation

  1. After thoroughly washing the chicken, take in a pot, add enough water, salt and halved onion and cook until the chicken is soft,
  2. Remove the chicken out of the broth and drain the broth with a strainer,
  3. Shred the chicken,
  4. Wash the rice thoroughly and drain,
  5. Take the butter and oil in a large pot and heat,
  6. Add the rice and roast until the rice starts sticking together,
  7. Add salt, turmeric, black pepper, currants, shredded chicken, chicken broth and water,
  8. Close the lid and let it cook in low heat until the rice absorbs all the water and become tender,
  9. Remove from heat and set aside for 10-15 mins. before serving.
