Baked Chicken Meatball Spaghetti Recipe
I don't know if you've tried my spaghetti with meatballs recipe before, but it's absolutely delicious. If you make it with flavorful summer tomatoes, you won't be able to get enough of it. In this recipe, I did the same but used chicken meatballs and baked it.
It's not too different from spaghetti with meatballs, really. The only difference is that the baked chicken meatball spaghetti is put in the oven for a little while. To keep the calories in check, I only used a small amount of Parmesan, but if you'd like, you can sprinkle a generous amount of mozzarella on top. Since chicken meatballs hold together easily on their own, there's no need for eggs. Don’t add an egg thinking it might have been forgotten, as it's not needed here.
You can also make the same recipe with beef meatballs.
Instead of fresh tomatoes, you can use your homemade canned tomatoes for winter. Half a cup of thick tomato sauce can replace one tomato.
Enjoy!
