Chickpea Tomato Soup Recipe
Serving : 4-6 Servings
Ingredients
- 5 tomatoes,
- 1 tablespoon butter,
- 1 tbsp flour,
- 1/4 cup of rice,
- 1 cup of boiled chickpeas,
- 5 cups of water,
- 1 cup of milk,
- 1 tsp thyme,
- 1 tsp dried mint,
- 1 tsp pepper flakes,
- Salt.
Preparation
- Grate the tomatoes,
- Melt the butter in a deep pan,
- Add flour and sautee until it smells good,
- Add tomatoes and stir well,
- Cover the lid and cook in low heat for 10-15 minutes,
- Add the water and mix (pulse with a blender if lumpy),
- Add rice and cook until soft in low heat,
- Add milk, chickpeas and spices and cook a few mins. more,
- Add salt, stir and remove from the heat.
