Turkish Style Quinoa Salad Recipe

Ingredients

  • 1 cup quinoa,
  • 1 cup boiling water,
  • 1 tbsp tomato paste,
  • 3 tsps ground red pepper,
  • 6-7 slices sun-dried tomatoes,
  • 10 pickles,
  • 3 tbsp canned capers,
  • 1 soup bowl chopped parsley,
  • 1 soup bowl chopped dill,
  • 3 tsps sumac,
  • 1/4 cup vegetable oil,
  • Juice of 1/2 lemon,
  • Salt to taste.

Preparation

  1. Pour quinoa in a strainer and wash under running water, rubbing,
  2. Transfer into a deep pan and add 1 cup of boiling water and salt, cook until tender,
  3. Put sun-dried tomatoes into hot water for 15 mins., drain and chop,
  4. Chop the pickles,
  5. Heat the vegetabşle oil in a pan,
  6. Add tomato paste, cook for 2-3 mins.,
  7. Add ground pepper, stir, remove from heat,
  8. Add cooked tomato paste and sumac into the quinoa and combine well,
  9. Add sun dried tomatoes, pickles, capari, parsley, dill and lemon juice and mix.
