Ingredients

  • 1/2 cup of quinoa,
  • 200 g raw spinach, chopped,
  • 1/2 bunch of parsley, chopped,
  • 5 slices of dried tomatoes,
  • 2 tablespoons of currant,
  • 2 tablespoons walnuts,
  • Juice of 1 lemon,
  • 1 tsp pepperflakes,
  • 1/2 teaspoon black pepper.

Preparation

  1. Wash and drain quinoa,
  2.  Place in a  pot; cover with 1 cup water,
  3. Boil, then reduce heat and simmer until tender,
  4. Wash and drain the sun dried tomatoes and place in a bowl, cover with boiling water and set aside for 10 mins.
  5. Drain and chop finely,
  6. Take spinach and parsley into a deep bowl,
  7. Add the quinoa, sun dried tomatoes, the walnuts,currants, pepperflakes and the black pepper,
  8. Spread the lemon juice over and mix the salad well.
