Spinach Omelette Cups

Serving : 4 Servings

Ingredients

  • 4 slices of sandwich bread,
  • 4 eggs,
  • 1 cup shredded spinach,
  • Salt and pepper,
  • 1 tbsp butter.

Preparation

  1. Sprinkle some salt over spinach and smash with your hands,
  2. In a bowl beat the eggs with salt and pepper,
  3. Add spinach and mix,
  4. Cut the edges of the bread slices,
  5. Expand the slices with a roll,
  6. Rub both sides with butter and cut the slices into two pieces,
  7. Place slices into muffin tins in a plus shape, one on top of the other,
  8. Pour the egg mixture into the slices,
  9. Bake in a 200 C degrees preheated oven until the egg is done and the edges are crispy.
