Spinach Omelette Cups
Serving : 4 Servings
Ingredients
- 4 slices of sandwich bread,
- 4 eggs,
- 1 cup shredded spinach,
- Salt and pepper,
- 1 tbsp butter.
Preparation
- Sprinkle some salt over spinach and smash with your hands,
- In a bowl beat the eggs with salt and pepper,
- Add spinach and mix,
- Cut the edges of the bread slices,
- Expand the slices with a roll,
- Rub both sides with butter and cut the slices into two pieces,
- Place slices into muffin tins in a plus shape, one on top of the other,
- Pour the egg mixture into the slices,
- Bake in a 200 C degrees preheated oven until the egg is done and the edges are crispy.
