- 5-6 small red peppers,
- 5 eggs,
- 1/4 cup olive oil,
- Remove the seeds of the pepper and cut them into short strips,
- Heat the oil in a pan and add the peppers, cook on low heat (lid on) until the peppers are softened,
- In a bowl, beat the eggs along with some salt,
- Pour the eggs onto the softened peppers and using a spoon make sure the eggs are equally distributed among the peppers,
- Cook on low (lid on) heat until the eggs are set.
