- 5-6 small red peppers,
- 5 eggs,
- 1/4 cup olive oil,
- Remove the seeds of the peppers and cut into short strips,
- Heat the olive oil and add the peppers, then cook on low heat (lid on) until the peppers soften,
- In a bowl whisk together the eggs and salt,
- Pour the eggs over the cooked peppers and stir to make sure the egg is equally distributed among the peppers,
- Put the lid on and cook on low heat until the eggs are set.
