- 1 bunch spinach,
- 1 onion,
- 3 eggs,
- Butter and vegetable oil,
- Salt, black pepper.
- Finely chop the onion and sauté until translucent,
- Add the chopped spinach and cook for 3-4 mins,
- Stir in the salt and black pepper,
- Crack the eggs over the spinach and put the lid on,
- Cook on low heat until the egg whites are set.
