Rolled Potato Salad Cake Recipe

Ingredients:

  • 3 medium potatoes,
  • 4 tablespoons Greek yoghurt,
  • 2 tablespoon mayonnaise,
  • 3 tablespoons of cooked peas,
  • 2 tablespoons of cooked carrots,
  • Salt,
  • Dried mint,
  • Red pepper flakes,
  • Black pepper.

Preparation:

  1. Boil the potatoes until really soft, drain and mash,
  2. Add 1 tablespoon of mayo, salt and black pepper then stir well,
  3. In a separate bowl, mix together the yoghurt and 1 tablespoon of mayo along with 1/2 teaspoon salt,
  4. Put plastic wrap on the kitchen counter,
  5. Place the mashed potatoes onto the plastic wrap and press it out into a 1/2 cm thick rectangle,
  6. Smear half of the yoghurt mixture onto the potato layer,
  7. Evenly distribute the peas and carrots on top,
  8. Now roll the potato starting from the wider side,
  9. Transfer onto the serving platter and cover with the rest of the yoghurt sauce,
  10. Now decorate with dried mint, red pepper flakes and extra peas.
