Roasted Eggplant with Yoghurt Recipe Roasted Eggplant with Yoghurt Recipe

Ingredients:

  • 4 eggplants,
  • 250 gr. ground beef / lamb,
  • 2 red peppers,
  • 3 green peppers,
  • 2 tomatoes,
  • 1 onion,
  • 1/4 cup vegetable oil,
  • 1 tablespoon tomato paste,
  • 1 tablespoon pepper paste,
  • Cumin, paprika, salt.
  • Yoghurt
  • Crushed Garlic

Preparation:

  1. Roast the eggplants over the stove or in the oven,
  2. Finely chop the onion and peppers and sauté in vegetable oil until softened,
  3. Add the tomato and pepper pastes and stir for 1-2 mins,
  4. Add the paprika and stir,
  5. Add the ground beef and cook over medium heat until the meat is fully cooked,
  6. Add the cumin and grated tomatoes,
  7. Peel and finely mince the roasted eggplants (or mash with fork),
  8. Add the eggplants to the meat mixture and cook over low heat for 10 more minutes,
  9. Add the salt, stir and remove from heat,
  10. Serve with yoghurt mixed with crushed garlic.
