Roasted Eggplant Dish Recipe Roasted Eggplant Dish Recipe


  • 6 eggplants,
  • 1 onion, chopped,
  • 3 green peppers, chopped,
  • 4 tomatoes, peeled and diced,
  • 2-3 tbsps vegetable oil,
  • 1 tbsp tomato paste,
  • 1 tsp powdered chilli,
  • 1/2 tsp pepper,
  • Salt to taste.

For Topping sauces;

  • 4 heaping spoons of plain yogurt,
  • 1 clove of garlic, grated,
  • Salt to taste,
  • 2 tbsps vegetable oil,
  • 1 tsp powdered chilli.


  1. Roast the eggplants over stove or in the oven,
  2. Heat oil in a large pan,
  3. Add into onions and green peppers and cook, constantly stirring, until tender,
  4. Add into the tomato paste and cook for another 2-3 mins.,
  5. Add into chilli powder and pepper, stir well,
  6. Add into tomatoe and cook until tender,
  7. Peel and chop the roasted eggplants and add into the dish, cook for another 10 mins.,
  8. Add salt, stir and remove from heat,
  9. For sauce in a deep bowl combine yogurt, garlic and salt and mix well,
  10. Heat oil in a pan,
  11. Add into the chilli powder, stir and remove from heat,
  12. Portion the dish into serving plates, Pour the sauce over and top with chilli sauce.
