Eggplant Sauce Manti Recipe Eggplant Sauce Manti Recipe


  • 500 g manti,
  • Water for boiling.

For Sauce;

  • 2 eggplants,
  • 2 tomatoes, grated,
  • 1 tbsp tomato paste,
  • 5 tbsps vegetable oil,
  • Salt to taste.

For Yogurt Sauce;

  • 2 cups plain yogurt,
  • 1 clove of garlic, grated,
  • Salt to taste.


  1. For yogurt sauce combine yogurt, garlic and salt together and mix well, set aside in the fridge,
  2. For eggplant sauce peel and dice eggplants,
  3. Heat oil in a large pan and add eggplants,
  4. Cover the lid and cook until golden, stirring occasionally,
  5. Meanwhile boil some water in a pan and add mantis, cook until tender,
  6. When the eggplants are ready add tomato pasta and cook for 1-2 mins.,
  7. Add grated tomato and cook until desired consistency,
  8. Add salt, stir and remove from heat,
  9. Transfer mantis into the serving plates with a slotted spoon,
  10. Pour first yogurt sauce, then eggplant sauce over,
  11. Sprinkle any spices of your coice.
