Ground Beef Zucchini Boat Recipe

Ingredients
- 4 green zucchini,
- 400 g ground beef,
- 1 onion,
- 1 tbsp tomato paste,
- 1 tsp sweet ground red pepper,
- 1 large tomato,
- 5 tbsp olive oil,
- Salt,
- Black pepper,
- 8 tbsp grated mozzarella (or another melting cheese),
- Chopped parsley.
Preparation
- Slice the zucchinis lengthwise and scoop out the centers with a teaspoon,
- Drizzle with olive oil, arrange on a baking sheet lined with parchment paper, and bake in a preheated oven at 180°C until the edges are slightly browned,
- Meanwhile, sauté the chopped onion in 4 tbsp olive oil until softened,
- Add the ground beef and cook until it releases its juices and reabsorbs them,
- Add the tomato paste and sauté until its raw smell disappears,
- Stir in the ground red pepper,
- Add the chopped tomato and cook until softened,
- Season with salt and black pepper, then remove from the heat,
- Spoon the mixture into the pre-baked zucchini halves,
- Sprinkle with grated cheese,
- Return to the oven and bake until the cheese is melted.
