Stuffed Eight Ball Zucchini Recipe with Video
Serving : 4-6 Servings
Ingredients
- 5 eight ball zucchinies,
- 200 g ground beef,
- 3/4 cup rice, washed and drained,
- 1 large onion, chopped,
- 2 tablespoons tomato paste,
- 1 tablespoon pepper paste,
- 2 tsps ground red pepper,
- Black pepper,
- Dry mint,
- Red pepper flakes,
- 1 cup water,
- 4-5 tbsps olive oil,
- Salt.
For sauce;
- 1 tbsp tomato paste,
- 3 cups boiling water,
- Salt to taste.
Preparation
- Heat olive oil in a large pan and add into ground beef,
- Stir fry until it turns into a brown colour,
- Add onion and sauté until tender,
- Add the tomato and pepper pastes and stir for 1-2 mins,
- Add the rice and water to the pan and stir well,
- Add the salt and spices, mix and cook until it absorbs all the water, remove from heat,
- Cut top of the zucchinies and gut with a dessert spoon,
- Stuff 3/4 of the zucchinies with rice mixture and lid with the pieces you cut,
- Place them in the separate pan,
- For sauce in a bowl combine tomato paste, salt and hot water,
- Add sauce into the pan,
- Cook until the zucchinies and rice tender in low heat.
