Stuffed Eight Ball Zucchini Recipe Stuffed Eight Ball Zucchini Recipe


  • 6 eight ball zucchinies,
  • 200 g ground beef,
  • 3/4 cup rice, washed and drained,
  • 1 large onion, chopped,
  • 1 tomato, grated,
  • 2 tablespoons tomato paste,
  • 1 tablespoon pepper paste,
  • 2 tsps ground red pepper,
  • Salt,
  • Black pepper,
  • Dry mint,
  • Red pepper flakes,
  • 1 cup water,
  • 1/2 cup vegetable oil.

For sauce;

  • 1 tbsp tomato paste,
  • 3 cups hot water,
  • Salt to taste.


  1. Sauté the finely chopped onions in vegetable oil until tender,
  2. Add ground beef and fry well until it changes color,
  3. Add the tomato and pepper pastes and stir for 1-2 mins,
  4. Add grated tometo and ground red pepper and cook for a few mins. more,
  5. Add the rice to the pan and stir for 2 mins,
  6. Add the salt, spices and 1 cup of water,
  7. Cook on medium heat until the rice absorbs all the water, remove from heat,
  8. Cut top of the zucchinies and gut with a dessert spoon,
  9. Stuff 3/4 of the zucchinies with rice mixture and lid with the pieces you cut,
  10. Place them in the separate pan,
  11. For sauce in a bowl combine tomato paste, salt and hot water,
  12. Add sauce into the pan,
  13. Cook until the zucchinies and rice tender in low heat.
