Stuffed Eight Ball Zucchini Recipe

Stuffed Eight Ball Zucchini Recipe with Video

Serving : 4-6 Servings

Ingredients

  • 5 eight ball zucchinies,
  • 200 g ground beef,
  • 3/4 cup rice, washed and drained,
  • 1 large onion, chopped,
  • 2 tablespoons tomato paste,
  • 1 tablespoon pepper paste,
  • 2 tsps ground red pepper,
  • Black pepper,
  • Dry mint,
  • Red pepper flakes,
  • 1 cup water,
  • 4-5 tbsps olive oil,
  • Salt.

For sauce;

  • 1 tbsp tomato paste,
  • 3 cups boiling water,
  • Salt to taste.

How to make steps

Preparation

  1. Heat olive oil in a large pan and add into ground beef,
  2. Stir fry until it turns into a brown colour,
  3. Add onion and sauté until tender,
  4. Add the tomato and pepper pastes and stir for 1-2 mins,
  5. Add the rice and water to the pan and stir well,
  6. Add the salt and spices, mix and cook until it absorbs all the water, remove from heat,
  7. Cut top of the zucchinies and gut with a dessert spoon,
  8. Stuff 3/4 of the zucchinies with rice mixture and lid with the pieces you cut,
  9. Place them in the separate pan,
  10. For sauce in a bowl combine tomato paste, salt and hot water,
  11. Add sauce into the pan,
  12. Cook until the zucchinies and rice tender in low heat.
