Carrot And Biscuit Delights

Ingredients
- 2 medium carrots,
- 200 gr. petit beurre biscuits (or any other butter biscuits you like),
- 1/2 cup granulated sugar,
- 1/4 cup finely ground walnuts,
- 1/2 cup grated coconuts.
Preparation
- Grate the carrots,
- Place the carrots and sugar in a large saucepan and cook over medium heat until the carrots are softened,
- Remove from heat and let cool,
- Finely grind the biscuits in a food processor,
- Add the carrots, walnuts and granulated sugar into biscuits,
- Mix everything together with your hands,
- Make small balls and cover with grated coconut.
