Carrot Cake With Frosting Recipe Carrot Cake With Frosting Recipe Carrot Cake With Frosting Recipe

Ingredients:

  • 3 eggs,
  • 3/4 cup granulated sugar,
  • 1/3 cup vegetable oil,
  • 1 cup milk
  • 2,5 cups flour,
  • 25 gr. baking powder,
  • 1 teaspoon cinnamon,
  • 2 carrots,
  • 1 cup coarsely chopped walnuts.

Frosting;

  • 200 ml heavy cream,
  • 2 tablespoons powdered sugar.

Preparation:

  1. Cream together the eggs and sugar,
  2. Whisk in the vegetable oil and milk,
  3. In a separate bowl, mix together flour, baking powder and cinnamon,
  4. Add the dry ingredients into the wet ingredients slowly while whisking,
  5. Finally fold in the grated carrots and walnuts,
  6. Pour the batter into a greased springform pan,
  7. Bake at 190 degrees celsius until the top is golden,
  8. For the frosting, whip the heavy cream and powdered sugar until you get stiff peaks,
  9. Once the cake cools down, flatten the top of the cake using a knife,
  10. Then cut the cake into 3 layers,
  11. Spread 1/3 of the frosting on the bottom layer,
  12. Place the other layer on top and cover the cake with the half of the rest of the frosting,
  13. Place the last layer on top and spread the remaining frosting on top and sides of the cake,
  14. Crumble the trimmed piece of cake using your hands and sprinkle to the sides of the cake,
  15. Serve chilled.
