Carrot Cake With Frosting Recipe
Serving : 8-10 Servings
Ingredients
- 3 eggs,
- 3/4 cup granulated sugar,
- 1/3 cup vegetable oil,
- 1 cup milk
- 2,5 cups flour,
- 25 gr. baking powder,
- 1 teaspoon cinnamon,
- 2 carrots,
- 1 cup coarsely chopped walnuts.
Frosting;
- 200 ml heavy cream,
- 2 tablespoons powdered sugar.
Preparation
- Cream together the eggs and sugar,
- Whisk in the vegetable oil and milk,
- In a separate bowl, mix together flour, baking powder and cinnamon,
- Add the dry ingredients into the wet ingredients slowly while whisking,
- Finally fold in the grated carrots and walnuts,
- Pour the batter into a greased springform pan,
- Bake at 190 degrees celsius until the top is golden,
- For the frosting, whip the heavy cream and powdered sugar until you get stiff peaks,
- Once the cake cools down, flatten the top of the cake using a knife,
- Then cut the cake into 3 layers,
- Spread 1/3 of the frosting on the bottom layer,
- Place the other layer on top and cover the cake with the half of the rest of the frosting,
- Place the last layer on top and spread the remaining frosting on top and sides of the cake,
- Crumble the trimmed piece of cake using your hands and sprinkle to the sides of the cake,
- Serve chilled.
