Leek with Olive Oil Recipe



 Leek with Olive Oil Recipe


  • 5-6 leeks,
  • 3 carrots,
  • 1/3 cup olive oil,
  • 1/3 cup rice,
  • Juice of half a lemon,
  • 2 teaspoons salt
  • 2 teaspoons sugar,
  • 2 teaspoons flour,
  • 3,5-4 cups water.


  1. Cut and discard the green parts of the leeks,
  2. Remove and discard the first layer of each leek stalk,
  3. Wash well and cut into 1.5 cm pieces,
  4. Peel and thinly slice the carrots,
  5. Heat the olive oil in a saucepan,
  6. First add the carrots and then the leeks,
  7. Put the lid on,
  8. Let them cook over medium heat for 5-10 mins,
  9. In a separate bowl, mix together the water, sugar, salt, flour and lemon juice,
  10. Add this to the sauce pan and put the lid back on,
  11. Once the leeks and carrots are softened, add the rice,
  12. Boil until the rice is fully cooked,
  13. Serve chilled.
