Leek with Olive Oil Recipe
Serving : 4 Servings
Ingredients
- 5-6 leeks,
- 3 carrots,
- 1/3 cup olive oil,
- 1/3 cup rice,
- Juice of half a lemon,
- 2 teaspoons salt
- 2 teaspoons sugar,
- 2 teaspoons flour,
- 3,5-4 cups water.
Preparation
- Cut and discard the green parts of the leeks,
- Remove and discard the first layer of each leek stalk,
- Wash well and cut into 1.5 cm pieces,
- Peel and thinly slice the carrots,
- Heat the olive oil in a saucepan,
- First add the carrots and then the leeks,
- Put the lid on,
- Let them cook over medium heat for 5-10 mins,
- In a separate bowl, mix together the water, sugar, salt, flour and lemon juice,
- Add this to the sauce pan and put the lid back on,
- Once the leeks and carrots are softened, add the rice,
- Boil until the rice is fully cooked,
- Serve chilled.
