- 4 mid-sized carrots, peeled and grated,
- 1 small egg,
- 2 tbsps flour,
- Salt and pepper to taste,
- Vegetable oil for frying.
- In a deep bowl beat the egg,
- Add flour, grated carrots, salt and pepper and combine well,
- Heat oil in a non-stick frying pan over medium heat,
- Add 1/4 cup of batter per fritter to frying pan,
- Cook fritters in batches for 3 minutes each side, or until golden and cooked through.
