Carrot Fritters Recipe



  • 4 mid-sized carrots, peeled and grated,
  • 1 small egg,
  • 2 tbsps flour,
  • Salt and pepper to taste,
  • Vegetable oil for frying.


  1. In a deep bowl beat the egg,
  2. Add flour, grated carrots, salt and pepper and combine well,
  3. Heat oil in a non-stick frying pan over medium heat,
  4. Add 1/4 cup of batter per fritter to frying pan,
  5. Cook fritters in batches for 3 minutes each side, or until golden and cooked through.
