Baked Potatoes With Ground Beef Sauce

Baked Potatoes With Ground Beef Sauce

Ingredients:

  • 5 mid-sized potatoes,
  • 250 g ground beef,
  • 1 onion, chopped,
  • 2 green peppers, chopped,
  • 2 tomatoes,
  • 1 tbsp tomato paste,
  • 4-5 tbsp vegetable oil,
  • 1/2 tsp cumin,
  • 1/2 tsp black pepper,
  • 1 tsp ground sweet pepper,
  • 2.5 cups boiling water,
  • Salt to taste,
  • Extra oil for brushing baking dish and potatoes.

Preparation:

  1. Peel and cut the potatoes in circles,
  2. Brush a 22*22 cm baking dish with vegetable oil,
  3. Place the potato slices into the dish,
  4. Brush tops with vegetable oil again,
  5. Bake at 190 C degrees until golden,
  6. Heat 4-5 tbsps vegetable oil in large frying pan,
  7. Sauté onions and  green peppers in oil until tender over medium heat,
  8. Add ground beef and sauté until no longer pink,
  9. Add diced tomatoes and cook until tender,
  10. Add cumin, salt and pepper, stir,
  11. Add water, stir and remove from heat,
  12. Remove the potatoes from oven and spread ground meat mixture on top,
  13. Bake at 190 C degrees for another 15-20 mins.
