Baked Meatballs With Vegetables
Serving : 4 Servings
Ingredients
- 2 potatoes,
- 2 zucchinies,
- 2 eggplants,
- 4tbsp vegetable oil,
- 1,5 tbsl tomato paste,
- 2 tsps ground red pepper,
- 2 cloves of garlic,
- 1 tsp thyme,
- 2 cups water,
- Salt to taste.
For meatballs;
- 200 g ground beef,
- 1 small egg,
- 1/2 onion, grates,
- 1 tbsp bread crumbs,
- 1/2 tsp black pepper,
- 1/2 tsp cumin,
- 1 handful of chopped parsley,
- Salt to taste.
Preparation
- Combine all the ingredienst for meatballs in a bowl and knead,
- Shape in balls in size of walnuts,
- Pell potatoes, zucchinies and eggplants and chop in size of the meatballs,
- Transfer vegetables in a bowl, add salt and pepper and combine well,
- Place a parchement paper into a baking dish,
- Place meatballs and vegetables onto the parchement paper,
- Bake in a 200 C degrees pre-heated oven until vegetables are crispy in the edges,
- In a bowl combine tomato paste, ground red pepper, minced garlic, thyme, salt and water and mix,
- Remove the dish from the oven and take parchement paper out,
- Pour the sauce over vegetables and meatballs,
- Bake again for 20-25 mins.
