Baked Meatballs With Vegetables

Baked Meatballs With Vegetables


  • 2 potatoes,
  • 2 zucchinies,
  • 2 eggplants,
  • 4tbsp vegetable oil,
  • 1,5 tbsl tomato paste,
  • 2 tsps ground red pepper,
  • 2 cloves of garlic,
  • 1 tsp thyme,
  • 2 cups water,
  • Salt to taste.

For meatballs;

  • 200 g ground beef,
  • 1 small egg,
  • 1/2 onion, grates,
  • 1 tbsp bread crumbs,
  • 1/2 tsp black pepper,
  • 1/2 tsp cumin,
  • 1 handful of chopped parsley,
  • Salt to taste.


  1. Combine all the ingredienst for meatballs in a bowl and knead,
  2. Shape in balls in size of walnuts,
  3. Pell potatoes, zucchinies and eggplants and chop in size of the meatballs,
  4. Transfer vegetables in a bowl, add salt and pepper and combine well,
  5. Place a parchement paper into a baking dish,
  6. Place meatballs and vegetables onto the parchement paper,
  7. Bake in a 200 C degrees pre-heated oven until vegetables are crispy in the edges,
  8. In a bowl combine tomato paste, ground red pepper, minced garlic, thyme, salt and water and mix,
  9. Remove the dish from the oven and take parchement paper out,
  10. Pour the sauce over vegetables and meatballs,
  11. Bake again for 20-25 mins.
