Artichokes With Fresh Peas Recipe
Serving : 4 Servings
Ingredients
- 8 whole artichokes,
- 500 g shelled fresh peas,
- 2 medium carrots, chopped,
- 1 onion, chopped,
- 3-4 tablespoons olive oil,
- Juice of half lemon,
- 1 tsp flour,
- 1 tsp sugar,
- 1 tsp salt,
- 2 cups of water.
Preparation
- Remove the peas from the shells wash and drain,
- Combine water, lemon juice, salt, sugar and flour in a bowl, mix well,
- Heat oil in a large pan, add onions and cook until tender,
- In the meantime, remove several layers of thick outer leaves of artichokes,
- Cut the tips about 1-1,5 cm.,
- Quarter the artichokes and remove the hairy part in the middle (if you can not do this procedure fast enough, put them in lemon water as soon as cutting - not to get dark)
- Add artichokes and peas to roasted onions and stir,
- Add the lemon mixture, stir,
- Cover the lid and cook in low heat until all the ingredients become tender.
