Artichokes With Fresh Peas Recipe

Serving : 4 Servings

Ingredients

  • 8 whole artichokes,
  • 500 g shelled fresh peas,
  • 2 medium carrots, chopped,
  • 1 onion, chopped,
  • 3-4 tablespoons olive oil,
  • Juice of half lemon,
  • 1 tsp flour,
  • 1 tsp sugar,
  • 1 tsp salt,
  • 2 cups of water.

Preparation

  1. Remove the peas from the shells wash and drain,
  2. Combine water, lemon juice, salt, sugar and flour in a bowl, mix well,
  3. Heat oil in a large pan, add onions and cook until tender,
  4. In the meantime, remove several layers of thick outer leaves of artichokes,
  5. Cut the tips about 1-1,5 cm.,
  6. Quarter the artichokes and remove the hairy part in the middle (if you can not do this procedure fast enough, put them in lemon water as soon as cutting - not to get dark)
  7. Add artichokes and peas to roasted onions and stir,
  8. Add the lemon mixture, stir,
  9. Cover the lid and cook in low heat until all the ingredients become tender.
