Fresh Pea Casserole Recipe
Ingredients
- 1 kg fresh peas (not hulled),
- 1 onion, chopped,
- 1 carrot, chopped
- 2 potatos, chopped,
- 4 tbsps vegetable oil,
- 1 tbsp tomato paste,
- 1 tsp chilli powder,
- Salt to taste,
- 3 cups boiling water.
Preparation
- Heat vegetable oil, add in the onions and half-cook,
- Add carrots and potatos, stir well,
- Cover the lid and cook, stirring intervally, until half-cooked,
- Meanwhile hull the peas,
- Add the tomato paste into the casserole and cook, constantly stirring for a few mins.,
- Add chilli powder and stir well,
- Add in peas and water, stir,
- Cover the lid and cook in low heat until the peas are tender,
- Add salt and remove from heat.
