Welsh Cake Recipe
Serving : 10-15 Pieces
Ingredients
- 100 butter, chopped into cubes and frozen,
- 2 cups flour,
- 1 egg,
- 1 tbsp milk,
- 1 heaping spoon of confectioners sugar,
- 1/2 tsp baking powder,
- 1/2 tsp allspice,
- 1/2 cup currants,
- 1-2 tsps butter for frying.
Preparation
- In a deep bowl combine flour, baking powder and confectioners sugar together,
- Add butter and either using a pastry cutter or a fork, break the butter into the flour mixture until it’s evenly distributed among the dry mixture,
- Add egg, milk, currants and allspice and knead until you reach a smooth dough,
- Roll the dough 5 mm thickness on the counter,
- Cut with cookie cutters,
- In a large pan heat 1 tsp butter,
- Place the cakes into the pan,
- Cook in mid-low heat until golden then turn upside down and cook other side,
- Add butter after you remove the cakes from the pan if necessary.
