Welsh Cake Recipe

Serving : 10-15 Pieces

Ingredients

  • 100 butter, chopped into cubes and frozen,
  • 2 cups flour,
  • 1 egg,
  • 1 tbsp milk,
  • 1 heaping spoon of confectioners sugar,
  • 1/2 tsp baking powder,
  • 1/2 tsp allspice,
  • 1/2 cup currants,
  • 1-2 tsps butter for frying.

Preparation

  1. In a deep bowl combine flour, baking powder and confectioners sugar together,
  2. Add butter and either using a pastry cutter or a fork, break the butter into the flour mixture until it’s evenly distributed among the dry mixture,
  3. Add egg, milk, currants and allspice and knead until you reach a smooth dough,
  4. Roll the dough 5 mm thickness on the counter,
  5. Cut with cookie cutters,
  6. In a large pan heat 1 tsp butter,
  7. Place the cakes into the pan,
  8. Cook in mid-low heat until golden then turn upside down and cook other side,
  9. Add butter after you remove the cakes from the pan if necessary.
