Chickpea Salad Recipe


  • 2 cups boiled chickpeas,
  • 1 cup boiled corn,
  • 4 roasted red peppers,
  • 3-4 cornichon pickles,
  • 3-4 sun-dried tomatoes,
  • Green onion,
  • Fresh mint leaves,
  • Dill,
  • Pomegranate molasses,
  • Olive oil,
  • Salt.


  1. Stir together the chickpeas and corn in a large bowl,
  2. Chop the red peppers into small cubes and add to the bowl,
  3. Add finely chopped cornichons,
  4. Submerge the sun-dried tomatoes in hot water for 10-15 mins,
  5. Drain, finely chop and add them to the bowl,
  6. Finally add finely chopped green onions, fresh mint leaves and dill according to your taste,
  7. Dress the salad with pomegranate molasses, olive oil and salt,
  8. Stir well and serve.
