Chickpea Salad Recipe
Serving : 4 Servings
Ingredients
- 2 cups boiled chickpeas,
- 1 cup boiled corn,
- 4 roasted red peppers,
- 3-4 cornichon pickles,
- 3-4 sun-dried tomatoes,
- Green onion,
- Fresh mint leaves,
- Dill,
- Pomegranate molasses,
- Olive oil,
- Salt.
Preparation
- Stir together the chickpeas and corn in a large bowl,
- Chop the red peppers into small cubes and add to the bowl,
- Add finely chopped cornichons,
- Submerge the sun-dried tomatoes in hot water for 10-15 mins,
- Drain, finely chop and add them to the bowl,
- Finally add finely chopped green onions, fresh mint leaves and dill according to your taste,
- Dress the salad with pomegranate molasses, olive oil and salt,
- Stir well and serve.
