Dried Beans Salad Recipe
Chickpea salad is a salad that I love very much and that I often prepare for lunches that I prepare for myself. In addition to my love for it, the fact that I always keep boiled chickpeas in the freezer has a great effect on this. Since I use boiled chickpeas in many different recipes from salads to soups, it makes my life much easier to have it on hand.
Although I use dry beans in recipes such as Antalya style piyaz or fasulye piyazı from time to time, I do not consider it necessary to keep boiled beans at hand, since I use them in recipes such as dried beans stew, which should be used mostly raw. I also don't use canned beans as I find them too soft. In this case, when I need boiled beans in recipes such as this bean salad, I have to boil the beans. I guess I'm not complaining enough about that. If I were, I would make it a habit to store boiled dried beans like chickpeas.
In dried bean salad, unlike piyaz, dried beans are one of the other ingredients in the recipe, not the main ingredient. It is used in equal amounts with other ingredients. You can think of it like any ingredient of any mixed salad. But it still turns out to be a more fulfilling salad than a çoban salatası just like chickpea salad.
In addition to the classic summer salad ingredients, I add roasted peppers to the salad. If you wish, you can also chop it raw without roasting it. Raw red peppers also adds a nice flavor to salads. You can also use vinegar or pomegranate syrup instead of lemon juice.

Ingredients
- 3/4 cup of dried beans or 2 cups of boiled dried beans,
- 2 cucumbers,
- 2 tomatoes,
- 4 roasted red peppers,
- 1/2 purple onion,
- 1 handful of parsley,
- Juice of 1/2 lemon,
- 4 tablespoons of olive oil,
- Salt to taste.
Preparation
- If you are going to use dried beans, soak them overnight,
- The next day simmer them until soft but not fall apart,
- Peel the cucumbers and chop them into small pieces,
- Chop the onion finely,
- Chop the tomatoes into small pieces,
- Chop the red peppers into small pieces,
- Chop the parsley,
- Take them all in a bowl,
- Drizzle lemon juice, salt and olive oil over and mix.
