Savory Spinach Muffins Recipe

Serving : 15-20 Pieces

Ingredients

  • 3 eggs,
  • 1/4 cup olive oil,
  • 1 cup sautéed spinach,
  • 1 cup grated cheddar,
  • 1 cup milk,
  • 2 tablespoons yoghurt
  • 25 gr. baking powder,
  • 1 teaspoon salt,
  • 3 cups flour.

Preparation

  1. Beat the eggs,
  2. Whisk in the oil, milk and yoghurt,
  3. Add the flour, baking powder and salt, then whisk until everything is incorporated,
  4. Stir in the spinach and cheese,
  5. Pour into muffin liners and bake at 200 degrees celsius preheated oven until the top is golden brown or until a toothpick inserted in the centre comes out clean.
