Corn Flour Muffins
Serving : 6-12 Servings
Ingredients
- 2 eggs,
- 1 cup of milk,
- 1/2 cup of olive oil,
- 2 cups of corn flour,
- 10 g of baking powder,
- 1 tsp of salt,
- 1/2 cup of crumbled feta cheese,
- 6-7 black olives for topping (pitted and chopped).
Preparation
- Whisk the eggs in a large bowl,
- Add the olive oil and milk and continue whisking,
- Add the cornmeal, baking powder and salt slowly while stirring, then whisk until everything is well incorporated,
- Add cheese and stir well,
- Distribute the batter evenly among 6 big sized or 12 normal sized muffin molds,
- Top with chopped olives,
- Bake in a 190 degrees Celsius preheated oven until golden brown.
