Corn Flour Muffins

Serving : 6-12 Servings

Ingredients

  • 2 eggs,
  • 1 cup of milk,
  • 1/2 cup of olive oil,
  • 2 cups of corn flour,
  • 10 g of baking powder,
  • 1 tsp of salt,
  • 1/2 cup of crumbled feta cheese,
  • 6-7  black olives for topping (pitted and chopped).

Preparation

  1. Whisk the eggs in a large bowl,
  2. Add the olive oil and milk and continue whisking,
  3. Add the cornmeal, baking powder and salt slowly while stirring, then whisk until everything is well incorporated,
  4. Add cheese and stir well,
  5. Distribute the batter evenly among 6 big sized or 12 normal sized muffin molds,
  6. Top with chopped olives,
  7. Bake in a 190 degrees Celsius preheated oven until golden brown.
